Black Beans
  • 6Cloves fresh garlicminced or chopped
  • 1/2Cup red onionchopped
  • 1Cup organic red, orange and yellow pepperI use the small on and one of each
  • 1/2Cup organic vegetable broth
  • 15 oz can of Westbrae Black Beans or Fig Food Co Bag of Black Beansdrain in colander
  • 1.5tsp organic chili powder
  • 1/2tsp organic ground cumin
  • 1/2tsp sea saltOlea Smoked Beechwood Sea Salt (optional but extra delicious)
  • 1/2tsp Yucatecan Recado RojoTeeny Tiny Spice
  • 2TB Extra Virgin Olive Oil (EVOO)Olea Estates, Braggs or Mediterranean
  • 1Cup Organic Cilantroleaves and stems, chopped
  • 6 La Preferida Pickled Mild Jalapeños
  • 1/2 red onionsliced
  • 1.5Cups Organic Broccoli Florets
  • 1Cup organic kaleshredded
  • 2Cups organic red cabbageshredded
  • 2TB Extra Virgin Olive Oil (EVOO)
  • 1/2 lemonjuiced
  • Redmond Sea Salt and cracked black pepper to taste
Bottom and Toppings
  • 2oz Snow White Goat Cheddarfinely sliced, remove if you are Vegan
  • 1 Avocadosliced
  • 1 lime
  • 1/2Cup kimchifinely sliced (Mother in law brand- optional but an extra delicious kick)
Beyond Meat Chicken
  • 8 Long strips of Beyond Meat Chicken
  • 1TB olive oil
  • For Taco: 8 GMO-free blue taco shells
  • For Tostado: 2 WrawP Gluten Free Pizza Crust
  • For Bowl: Cooked Farrow or Brown Basmati Rice
  1. Heat Vegetable broth in a saucepan, covered.
  2. When it comes to a light boil, add onion, and peppers, cover with the lid and cook for about 8 minutes. Stir a few times.
  3. Add garlic, black beans, chili powder, cumin, smoked beechwood sea salt, cracked black pepper. Simmer for 5 more minutes.
  4. Turn off heat. Add cilantro and EVOO and pickled jalapeño. Keep covered on the stove.
  1. Layer your steamer with onions first, followed by broccoli florets, shredded cabbage and kale. Cover and steam 5 minutes or until bright green. (Do not overcook these beauties or else you lose the bioactive known as Sulforaphane.
  2. Transfer to a bowl and add EVOO, Lemon Juice, Salt and Cracked Black pepper to taste.
Beyond Meat
  1. Place 8 strips (one strip per taco) in 1 TB of EVOO in a hot frying pan. Grill for 3 minutes. Remove promptly.
  1. Place in the toaster oven for 2 minutes. Place goat cheddar strategically into taco first, add beans and vegetables on top, sliced avocado and Kimchi on top. Squeeze lime juice for extra pizzaz.
Recipe Notes

This dish saves quite well for a quick warm up the next day.  Just toast tacos or added into a bowl of brown rice or farrow.  Slice up avocado and place a pinch of Kimchi on top with lime juice squeezed on top.
