On wash day or Monday in New Orleans, nothing tastes better than a bowl of creamy red beans and cauliflower rice topped with grilled Beyond Sausage. Yes, you heard me correct. I’ve perfected my recipe for the creamiest of beans without a stitch of animal products. Dorignac’s is carrying the Beyond Meat products in the freezer section, look for the PB tag.

Creamy Red Beans Vegan Style
Creamy, deliciously seasoned with nothing but vegetables, herbs and spices. Top it with a plant-based sausage and parsley.

Ingredients
Red Beans
  • 1 lb red beans Soak, drain, soak, and drain for 48 hours
  • 1 Red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 large vidalia oinion choped
  • 6 toes garlic minced
  • 4 stalks celery chopped
  • 1/2 cup fresh curly parsley finely chopped
  • 4 bay leaves
  • 1 long sprig of rosemary pedals
  • 1 tsp Coleman's mustard or 1 tsp of mustard seeds, cracked with mortar and pestle
  • 1 tsp sea salt smoked in beechwood or sea salt smoked paprika
  • 4 strips Kombucha seaweed optional
  • Cracked Pepper to taste
  • Cayenne Pepper to taste

  • rice either jasmine or cauliflower

  • Beyond Meat Sausage

Instructions
Red Beans
  1. Soak red beans starting 24 hours before cooking. Place beans in a stainless steel pot, cover with fresh filtered water and add 1 tsp of baking soda. If you have IBS you will benefit from soaking another 24 hours.
  2. Discard water after one day, then soak again for another 24 hours. Discard water.
  3. Add fresh water, all vegetables and seasoning and place on medium heat until it comes to boil.
  4. Turn down heat, cover for 2 hours, stirring sporadically.
  5. Toward the end of cooking time, remove cover, smash approximately 2 cups of beans then place back in pot and stir vigorously to blend. Turn off heat
Rice
  1. Cook Jasmine Rice or Cauliflower Rice.
Meat
  1. Grill or pan sautee Beyond Meat Sausage. After cooking for 6 minutes each side, remove and slice. Place 1/2 dozen sliced plant sausages on top of red beans and rice.
Recipe Notes

Kombu seaweed will add a nice seasoning flavor but the real magic is it helps with easing digestion of beans to decrease flatulence, plus it is a wonderful tasty way to add sea vegetables to your cajun vegan meal.
